The specification that matters most is rarely accuracy, it is logging interval against battery and memory life, because those three together set how long an unattended deployment can run. Channel count and input type come next, since a logger that accepts thermocouples will not necessarily accept 4-20 mA or pulse inputs. For validation and cold chain work, check whether the unit produces a tamper-evident record and whether its software output satisfies your auditor, as that requirement is easier to confirm before purchase than after.
