Beyond capacity and readability, the two practical constraints are the platter size relative to what you are weighing, since an overhanging load reads inconsistently, and the ingress protection rating if the scale will be washed down. Confirm whether you need legal-for-trade approval, because that requirement depends on jurisdiction and on whether the weight is used to price a transaction, and it is much easier to specify before purchase.
